NANA'S KITCHEN: ORANGE CAKE
It's always beautiful to work with fruits that are in season- and one that I'm seeing loads at the market is the orange! Ortanique, a much smaller and juicier variety of the standard orange is perfect for this upside down cake. Don't feel intimidated- it's easier then you think!
6-8 oranges (sliced thinly)
1 cup water
1 cup sugar
250gr icing sugar
250gr butter, softened
1 tsp baking powder
Pinch of salt
1 tsp Ginger or Cinnamon (optional)
1 orange, grated
Preheat oven to 320F. Line a 9" cake mould with parchment paper. Set aside,
In a pot, place the water and sugar, add the oranges and bring to a boil. Then cook on medium heat for 5-10 mins.
In the cake mould, place the oranges neatly and tightly next to each other.
Prepare the batter: mix the eggs, sugar and butter. Then add the flour, baking powder, salt, grated orange and spice (optional). Mix until smooth.
Transfer batter to the mould- on TOP of the orange slices.
Bake for 45 mins at 320F. Check if cooked by inserting a sharp knife into the cake. If it comes out dry- that means the cake is cooked!
Remove from oven, allow to cool and then flip onto a plate carefully.
